2021 Ascona Vineyard Sauvignon Blanc
The Sauvignon Blanc was harvested on August 31st 2021. I foot tread it in its bin and allowed the juice to soak for 39 hours on skins. The Brix came in at 21.5 with a pH of 3.17. It took a month for the juice to ferment in stainless steel tank (nerve-racking). After going through malolactic fermentation in neutral oak barrel, the wine completely finished in May of 2022.
